Boulevard speaks with Eliot Thomas, a New Zealand-born chef who cut his teeth cooking for a billionaire in a yacht in France. At Magpie, his restaurant in Singapore’s Tiong Bahru, he serve what he calls “borderless soul food”, drawing freely on his Fijian and Indian heritage, his French training, and whatever fresh ingredients the market offers that morning.
