Sullivans Cove unveiled its Winter Archive, presenting a rare opportunity to experience a rare selection of archival bottles

Tasmanian whisky distillery Sullivans Cove unveiled its Winter Archive—an intimate, museum-like showcase that invited guests to step inside the distillery’s private tasting room for a rare encounter with its history in a bottle.

This seasonal exhibition brought together a thoughtfully curated selection of whiskies that trace Sullivans Cove’s evolution from the early days of Tasmania’s whisky resurgence in the 1990s—when a handful of pioneers began restoring the island’s long-forgotten distilling tradition after nearly a century of dormancy and decline—to the acclaimed single malts that helped cement its reputation worldwide.

Each bottle on display marked a chapter in this resurgence, revealing the craft, patience and quiet ambition that shaped the distillery’s legacy. As one of the first distilleries to gain international recognition, Sullivans Cove helped spark a wave of new Australian whisky makers, laying the groundwork for a rapidly growing industry that now counts more than 300 distilleries across the country.

The exhibition invited guests on a sensory journey through some of Sullivans Cove’s most iconic single malts, offering a rare chance to explore early experimental releases alongside the legendary bottlings and rare expressions drawn from “lost casks”. Whisky lovers and collectors were not only be able to savour these archival treasures but, in select cases, secure a piece of Sullivans Cove’s history to take home.

The line-up was impressive and included some rare and exceptional expressions. Among the standouts was the HH0351 American Oak Single Cask, a 16-year-old single malt that’s earned plenty of international recognition.

There was also the 25th Anniversary 21-Year-Old, created by vatting four “lost casks” from 1997—a liquid time capsule.

The Millennium Gold caught the eye of collectors too. Originally released to mark the Sydney 2000 Olympics, it’s now a sought-after piece of local whisky history.

Rounding out the list is the Double Cask DC0100, bottled in 2019 to celebrate both the distillery’s 25th anniversary and its milestone 100th Double Cask batch.
