Sullivans Cove unveils a rare 17-year-old second-fill whisky
As the second oldest whisky distillery in Tasmania, Sullivans Cove enjoys the distinction of producing some of the most complex single-cask expressions in the Australian market. Further adding to the award-winning distillery’s exceptional portfolio is its rare 17-year-old American oak second-fill whisky release, the TD0107. With this blend, collectors enjoy a unique blend of herbal notes and a powerful dark and heavy finish.
The distillery’s understanding of the distilling process and maturation techniques are coded in the profile of the TD0107. Distilled in June 2006, it would be aged for roughly two decades to ensure that the perfect texture and malty character was achieved.
The whisky opens with a syrupy entry and a rich nasal quality to it. Sommeliers will likely notice the melted sugar and crisp green apple, as well as the peppercorn, lime sorbet and chocolate chips, among others, providing the nose with a delightful mix of fruity aromas.
On the palate, the entry is a bit more gentle, unraveling the biscuity notes with honey-coated macadamias and macadamia oil, followed by Lindt Lindor milk chocolate. These are complemented by fruiter and creamier elements, with touches of peaches, almond apricot and yoghurt bites. A thicker texture defined by the dusty oak provides the TD0107 with some much-needed balance.
Finishing the experience off is a captivating marriage between dark, earthy and sweet elements, such as dried cranberries and hazelnut-dark chocolate, followed by a richness of sticky date pudding and sweet spices. The heavy finish is meant to leave a lasting impression.
